cherry, black and red berry, pepper, coffee, garrigue and on and on as the wine
opens up. It's both cool and warm, both gentle and gripping, always delicious.
It will evolve over days, if not weeks. Take your time, make sure it sees air!
This comes from a tiny 1 hectare vineyard in Laureano’s village of Pinell de Brai, called Finca Cabeilles. It’s on an east-facing slope at 240m altitude, with soil composed principally of clay and a little limestone. The climate is hot and dry Mediterranean, and is only 50km inland from the sea. The vines are farmed biodynamically to achieve, as Laureano says, a ‘really alive plant’. The Carignan was planted in 1950, the others in 2000.
The grapes were hand harvested terribly early between 15 and 25 August, then made naturally and simply, without sulphites, yeasts or any other additions. The grapes were de-stemmed and fermented in stainless steel tank. After a total of 10 days ferment and maceration, with absolutely no extraction, the wine was racked, pressed and returned to tank to finish fermentation. It was racked again after 2 months to mature in stainless steel for 6 months. It was bottled by hand, unfiltered, unfined and labelled by hand.
